Can you even believe we're a few hours away from March!? I love new months. Fresh starts. It's always something I look forward to. Anyway, after a long hiatus from normalcy in the kitchen, here's my menu for this week. If I'm good about cooking and getting my butt in motion (walking/elliptical) then I'm going to reward myself with a celebration cake (funfetti cake) this weekend. DREAM BIG!
Sunday: White Fish Special
Monday: Shepherd's Pie
Tuesday: Dijon Pork Chops
Wednesday: Roasted Chicken with Sage sauce and rice
Thursday: Leftovers
Friday: Chicken Curry with Rice (from the jar)
Saturday: Out
What are your guys standard go-to recipes? I have like 8 that I rotate, but I want to throw some more in there. The Chicken with sherry sauce is definitely one I want to try out- just need to buy the sherry!
I love new months too-- esp when they start with celebration cake! I have a feeling March will bring a lot of celebrating so it seems appropriate to indulge. In fact, we should all jump on the celebration cake bandwagon :)
ReplyDeleteMichi's Shepherds Pie is my new go-to. I adore it. I made it on Friday night and on Saturday during my obnoxiously long run, all I could think about were my Shepherds Pie leftovers waiting for me for lunch! I tossed a little Frank's Hot Sauce on it too this week-- mmmmmm.
Here is my menu for the week:
--Sunday (I was out watching the Oscars with the girls, but I made a huge pot of this for the boy): Clinton Street Bakery Tomato Zucchini Bisque (I got the cookbook for Xmas and will do a full post with the recipe) Healthy, delicious, and great with a grilled cheese sandwich!

--Saturday: Braised Chicken Curry (I've had this several times at a friends house and I'm dying to try it myself. It is super delicious and super easy. Also, to make it healthier, she uses Pam (no oil) and white meat Chicken only. She also accompanies it with a side of greek yogurt/cucumber sauce and whole wheat naan. I also think I need to bake some cookies--it's been forever. Anyone have any favorite recipes I should try?

- tacos
- taco salad
- spaghetti with meat sauce (i have the best meat sauce recipe EVER but it uses pork and is not very low-fat for that reason. nonetheless, it is incredible. should i post it?)
- chilaquiles (thanks michi!)
- mussels with pasta (so easy and mussels are so cheap)
- beer butt chicken with veg/potatoes (ryan is the one who always makes this)
* someone sent me a southwestern corn chowder recipe that i might make tonight. looks awesome! i will report back on this.
* i always use the cookie recipe on the mrs. tollhouse bag but OMG they literally could not be worse for you!!
definitely post the meat sauce recipe--i've never made it!
