Eli's Weekly Menu 03.14.11

Sunday: Michelle's Chicken Sausage Bake (it was delicious!)
Monday: Turkey Burgers & Sweet Potatoe Fries
Tuesday: Lite General Tso's Chicken (still havent made it...)
Wednesday: Buttermilk Fried Chicken & Brussel Sprouts
Thursday: Cobb Salad
Friday: Eggplant Parmesan
Saturday: Beef and Broccoli over brown rice

    I don't have a menu list for this week yet, but I love reading what everyone's doing!! Very inspiring!

  2. I wish I could have donuts all week...i really love donuts.

    Sunday night: shepherds pie

    Monday: Salmon with cucumber dill sauce. This is super easy.
    - use a small container of 0% fat plain greek yogurt. squeeze some fresh lemon, chop up as much fresh dill as you want (I like it dilly so I use a small handful-- you can also use dried dill if you don't have fresh), grate a cucumber on a cheese grater, throw in about half, dash of salt and pepper and stick in fridge.
    - Marinate salmon in a little evoo, lemon, s&p, and dill for about 30 mins.
    -Bake depending on size and broil the top off for about 3-6 mins

    Delicious served with whole grain cous cous...and the best part is that you can have as much sauce as you want bc it is totally fat free and really low cal!

    Tues- Leftovers

    Wed- Leftovers

    Thursday-- still deciding. Might try and make the light general tso's chicken!

    Friday- Chili w/ Baked Potatoes

    Saturday- Pasta! Carb loading for 1/2 marathon on Sunday!

  4. hahaha, apologies, I was not clear.

    Once salmon is cooked. Take sauce out of fridge and smother all over and under the salmon! Easy peasy.
