Weekly menu + plan

whew- exhausting weekend at Tyler's lakehouse. obviously super unhealthy. Getting back on track... pilates on M, T, W, Th (skipping Friday class). a few dinners this week will be out bc melissa has a groupon for a dinner that's about to expire and we need to use, and i have another groupon that's about to expire that i'm using at a dinner with girls from work. so at least dinner this week will be cheap! but im gonna have to make an active effort to try to order healthy items at these places.

Mon- thai mussels (didnt end up making it last week) and thai cucumber tomato salad
Tue- girl date with melissa at braise
Wed- trying the chicken sausage bake finally!
Thur- dinner with girls from work at eleven plates
Fri- indian dinner at bombay bistro

  1. Gah I just typed everything out and lost it!! Here are the highlights:

    - You have lots of fun dinners out!! Lucky!
    - The Chicken sausage bake is really forgiving so modify it when you have different ingredients or are in the mood for something else!

    We are moved in, but not quite yet settled. I want to break in the kitchen though so I have an easy menu for us:

    Saturday: Lobel's tenderloin steaks- a v-day gift from dad- and couscous. I tried a new method to cook the steak. It came out bomb and the house stayed smoke-free!! 350* over for about 25 min (until steak's internal temp is 100*), then take out of the oven and turn up the heat to broil. Once it's super hot, put the steak back in for about 15 minutes (until the internal temp is about 130*). That's it! and did I mention smoke-free!?

    Sunday: Spaghetti and meatballs
    Monday: Baked chicken tenders and green beans
    Tuesday: Shepherd's pie
    Wednesday: Chicken and white bean cassoulet (old recipe from Paris)
    Thursday: Leftovers
    Friday: Tilapia with a lemon/white wine sauce
    Saturday: Baked chicken breast with tarragon gravy

  2. i'm loving seeing pics of the place! it's making me even more eager to book a ticket and come see for myself :)

    so are yall buying a grill so you dont have to worry about smokey cooking?? you have outdoor space now!

    i want the cassoulet recipe

    im not doing thai mussels tonight after all cause we had thai last night instead. soooo im just gonna go super healthy and do a cajun baked redfish with some steamed broccoli and couscous. im SLAMMED at work so something easy would be nice

  3. OMG and I forgot to mention - Elisa is with us on Friday!!! Can't wait to have our first guest!! Amelia has been practicing her 'Eh-yi's

    On the cassoulet - I can't for the life of me remember where the recipe came from, but I'll post my recipe after I make it this week. It's so easy and good and comforting.
