Weekly Menus. Let's do it!

Oh heyyyy. Heyyyy! I feel totally confident that I'm back in the weekly menu planning. I dropped the ball for the last 9 months-ish. But we're back! I'll post, and then you guys post. I'm circling around the same go-to dishes these days, so I need yalls inspiration. Here is what I've got going on this week:


Sun: Will made the Ranch Chili . It was bomb.
Mon: Out for a work event.
Tues: Roasted Salmon with goat cheese and balsamic reduction.
Wed: Coconut Basil Chicken Curry
Thurs: Roasted Chicken and potatoes
Fri: Leftovers or out
Sat: Spicy Stewed Beef with Creamy Cheddar Grits. PW. Love her.

What are you guys doing??

  1. i thought the roasted salmon w/ balsamic reduction had gorgonzola cheese? or is it really goat cheese? when we made it in LA, we used gorgon.

    i ate like oprah going into hibernation yesterday so this week (only 5 days) im doing pretty much only salads and soups with no meat, no fish, no bread, no dairy. it's gonna be pretty boring.

    DINNERS
    Mon- vegan tomato basil soup
    Tues- greek salad (mixed greens, tomatoes, banana peppers, cucumber, roasted chick peas)
    Weds- veggie stir fry, no rice
    Thurs- mexican salad (mixed greens, roasted corn, black beans, avocado, radish, jicama, carrots, cilantro-lime vinaigrette)
    Fri- multi-bean chili, no meat OR possible chana masala with spinach instead

  2. Yes! We used gorgonzola and the original recipe we used blue cheese, but I used to make it in the Tribeca apt with goat cheese (I think Lou or Laura didn't like the stinky cheese), and I have a ton of extra goat cheese lying around. Don't want it to go to waste!

    Just curious- is Ryan down with the veggie-only meals? I can't convince Will that a meat isn't required to have a filling meal.

  3. ohhhhh awesome- i like that you can make it with so many different cheeses!! i loved this dish

    ryan is NOT down with these meals. he's already planning on stocking the freezer with pizzas (sounds familiar!!? hahah) and doing runs to Taco C or Whataburger. seriously... ryan has a tapeworm. taylor's gone for the week so melissa will prob do dinner w/ me a lot over here and ryan can partake or do his own thing.

    I basically stole Michi's menu from last week:

    Sunday: Out with friends
    Monday: Will's Ranch Chili
    Tuesday: Salmon with yogurt dill sauce
    Wednesday: Out- FINS party
    Thursday: JP OOT; leftovers
    Friday: Michi's Hoisen Pork
    Saturday: Dinner at Whit's

      Have any of you found a great tortilla soup recipe? Its the first time I'm trying it and I found a simple one online, but have never tested it. Let me know!

      Mitch and I are in the same boat as Eli and Alex (in between grocery trips)

      Monday: Marinara Chicken Pasta
      Tuesday: Dad's skillet steak with roasted red potatoes (Happy to provide Dad's skillet steak recipe if anyone wants it)
      Wednesday: Sharks game! so quick leftovers before the game
      Thursday: Dinner out at this asian restaurant I got a Groupon for
      Friday: Parmesan Chicken
      Saturday: Off to Sonoma with Alicia and Cory (Sort of an early valentines thing)

      Eli let me know if you find a good tortilla soup recipe! I aways just pick up the kind at Zanottos
