I made turkey meatloaf last night and it was so good that we needed to eat the leftovers for dinner again. We never do that! Leftovers are strictly for lunches (or 1am snacks in Ryan's case) in this house. So I was thinkin and thinkin about what to do with this meatloaf besides a regular sub. And then BAM! Best idea ever...
- Leftover turkey meatloaf
- Rye bread
- Spicy mustard
- Swiss cheese (freshly sliced, not in a plastic package)
- Caramelized onion
We assembled this goodness and panini pressed it and O. M. G.
Ryan made an Asian cole slaw to go with it. But my sammy was the star of the show.
Umm turkey meatloaf sounds SO good to me right now. Can you send me the link to the recipe you used for it?!

ReplyDelete- 1 lb ground turkey meat
- 1 egg
- 10 RITZ crackers (crush 'em with your hands)
- 1/4 C milk
- 1 small can of tomato paste, halved
- 1 packet McCormick meatloaf seasoning, halved
Preheat to 375. Mix meat, egg, crackers, milk, 1/2 can of tomato paste, and 1/2 packet of seasoning in a bowl. Put into loaf shape (so attractive) on cookie sheet. Spread a thin layer of remaining tomato paste onto top. Cook for 30 mins or til done.
IT'S SO GOOD. Sometimes i'll add diced green chilies to the mixture before baking. Also delish.
This leftover sandwhich is an awesome idea! Will have to try it next time meatloaf is on the menu.

i will eat leftovers for dinner! ryan wont really. he'll eat leftovers as a snack but for some reason he's weird about leftovers for dinner. but it's good b/c it means i have lunches already made a lot and i don't have to share.
ReplyDeletethe one exception to this is if we can put a fried egg on the leftovers. like enchiladas or gallo pinto or grilled chicken with avocado and poblano peppers. he will eat leftovers with a fried egg on top.
That's hilarious! And, the fried egg thing reminds me of 'put some windex on it' from my big fat greek wedding.

2 tsp. paprika
1 1/2 tsp. salt
1 1/2 tsp. dried thyme
1 1/2 tsp. basil
1 tsp. black pepper
1 tsp. garlic powder
1 tsp. onion powder
PS. Having Ritz crackers in the house is DANGEROUS!
