Gnocchi with Sausage and Spinach

Well, Lou- looks like it's just me and you on this blog for now! I made a really good recipe tonight.

The recipe is below, but here are ways to make it healthier:
- Substitute spicy Italian sausage w/ spicy Italian TURKEY sausage. I used Thunder Heart Bison meat, which is amazing and you should read about it here. I added a little cayenne for some kick.
- I used way less cheese on my portion, and more spinach. I put lots o' cheese on Ryan's though.

Gnocchi with Sausage and Spinach

Ingredients
  • 1 package of gnocchi. I used this kind.
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 1 pound Italian sausage, casings removed
  • 1 clove garlic, finely chopped
  • 1 5-ounce bag baby spinach
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3/4 cup (3 ounces) grated Parmesan, plus more for garnishing
Preparation
  • Cook the gnocchi according to the package directions, reserving 1/4 cup of the cooking liquid.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the sausage and cook, crumbling it with a spoon, until browned, 5 to 7 minutes. Add the garlic, spinach, salt, and pepper and cook, tossing frequently, until the spinach wilts, about 3 minutes.
  • Add the drained gnocchi, the reserved cooking liquid, and the Parmesan and toss.
  • Divide among individual bowls and sprinkle with additional Parmesan.

  1. This looks absolutely delicious...esp since I'm doing the South Beach Diet and am not eating any carbs! I've got to try on wedding dresses in T-minus 3 weeks, so carbs have gone out the window. It's sad. I miss Special K. I'm definitely saving this in my file for when pasta is back on the menu. I wonder if they make whole wheat gnocchi?

  2. they def make whole wheat gnocchi! there are tofu noodles sold at whole foods-- it's like a fake pasta that people say is great,but i did hear they smell a lil funny.

    also, there is quinoa pasta! does that count as a carb?
